"Making waves since it opened on the increasingly hipsterish Micklegate, everything about Skosh (a short form of the Japanese sukoshi, meaning ‘a little bit’), from the industrial lighting, gunmetal grey walls and steel bench seating, says ‘modern British dining’ but that would be doing it a huge disservice. There are influences from Japan, the Middle East and Thailand, with judicious use of ingredients like edible flower seeds, sorrel emulsion and kombucha (fermented, lightly effervescent sweetened black or green tea) pectin. Saddleback pork, slow cooked and cubed, salmon caviar whipped to a cream and hake with a cauliflower puree topped with dukkah (a mix of nuts and spices) come close to perfection."

Tucked into the exposed eaves of a 12th-century Norman house, decorated with animal skins and ancient taxidermy, the House of Trembling Madness is a tight, friendly squeeze where hop-heads linger over two cask ales (both from the wonderful Wild Beer Co on this visit), specialist draft Belgian beers and an amazing, ever-changing selection of bottled brews (on top of which, you can drink anything that is for sale downstairs, paying £1.25 corkage). If the staff can't surprise you with something – say, a Japanese Hitachino Nest Classic Ale – you've officially exhausted the possibilities of beer."

"The House of the Trembling Madness is a great place to drink in York if you’re into quirky and unusual buildings. The original Trembling Madness is much smaller, quirkier and has a very odd charm to it, whereas the newly refurbished one is much bigger and has a classier vibe to it; it also has a shop downstairs where you can purchase your drinks for a fraction of the price and then take them upstairs to drink in the bar/restaurant!. Whichever one you visit, you’re sure to delight in its weirdness and enjoy wonderfully crafted drinks."

"If you cross a 12th century Norman dwelling with a taxidermist’s lounge you’ll get an idea of the diverse character of this lovable trinket of a bar situated on the first floor which is bustling any time of the day and any day of the week you visit. The three cask beers regularly rotate with the likes of Great Heck, Brass Castle and recently the likes of Wild Child. 6 well chosen craft keg lines treat imbibers to juicy IPAs from the likes of Deya, Verdant and Odyssey as well a Belgian and German beers."
